Cabbage salad

One of my favorite salads. Quick to prepare though savoury and nourishing. I first tasted it in Alto Adige where cabbage is commonly used but I also found it in Slovenia.

Preparation time: 10 minutes
Cooking time: 10 minutes

Ingredients (serves 4)

1/2 medium size green cabbage
2 tbsp capers
1 small potato
2 tsp mild mustard
2 tbsp olive oil



Brush, wash and peel the potato. Dice it into small pieces and boil it for 6/7 minutes or until cooked.
In the meantime wash the green cabbage and thinly chop it discarding the hardest parts. Finely chop the capers as well.
Drain the potato and quickly cool it in fresh water.
Put the cabbage, capers and potato in a large bowl. Add salt and mustard, patiently stirring until the mustard is evenly spread. Season with olive oil and pepper.
The salad is ready to be served but the taste will improve if let to rest for ten minutes.
