Vegetable soup recipe
with barley and chieves (for 4)

It is a Vegetable soup recipe typical of the Northern areas of Italy: there are several different ways to prepare it, I have seen this vegetable soup in almost every mountain restaurant in South Tyrol: you can find it whether with or without meat, with more, less or no tomato sauce, but always with local vegetables, that means, in this regions, carrots, potatoes, celery, onion, barley, and of course chieves.

Barley in particular is a kind of grain that has been always grown in mountain areas because it can grow even at more than 1000 meters altitude: so it was part of the local family agriculture, as well as chieves, that is visible in every mountain garden.

Among rural population there is some dialect common saying “iss a gerscht nor bleibsch wie am erscht”, that means something like “eat barley and you will stay like you were before”, so you will not get old. In fact barley is one of the healthiest grains.

For Vegetable soup  recipe with barley and chieves you need:

vegetables (2 carrots, 1 celery, 2 potatoes, 2 zucchinis, 1 leek, 1 onion)

some tomato concentrate or sauce

4 spoons barley (recommended is the pearl barley because it cooks quicker)

salt and pepper

2 or 3 leaves of laurel

½ to 1 bouillon cube (prefer in general the organic one)

olive oil

water (aproximately 1 liter)

eventually 1 spoon wheat

Cut all the vegetables in small pieces, put some oil in the pot and fry slightly onion and leek, then put potatoes, carrots, celery and zucchinis. Leave it some minutes and then add water, bouillon cube, laurel, barley and some tomato concentrate (some spoons), salt and pepper as needed. Let it cook until the barley is done (better with the pot cover). At the end, if you want to thicken a bit the soup you can add one spoon wheat, using a sieve and putting it little by little because otherwise it makes lumps. Put the pot off the fire and wait 10 minutes, meanwhile you can cut the chieves very small and at the end put some on every plate: it looks nice and gives a very special original flavour!
