Furthermore the oil is also subjected to chemical and sensory tests (tasting by commissions recognized by the Ministry of Agriculture) to check its compliance with the disciplinary measures. Tuscan Oil IGP also means typicality and a strong link with the territory, certified by the Community trade mark IGP (Protected Geographical Indication) and by strict production regulations.

Requirements of a real Tuscan
The production of the Tuscany IGP responds to a specific set of requirements that cover all the stages: from the cultivation of olive oil to the packaging.
Members enroll their olive groves on a list kept by the Consortium: all the plants registered, belonging to the different varieties provided by the Production Regulations, must be mandatorily grown in the administrative territory of the Tuscany region.
The operations of pressing the olives are communicated daily by the mills to the authorized offices in the Tuscan territory allowing inspection and accurate supervision.
Even at this stage of the production chain, as with the olive harvest, it is mandatory within the Tuscany region.
The oil that has passed the vetting traceability process, the chemical and organoleptic (oil tasting ) inspections as determined by the production regulations, may use the name and to be packaged as IGP. The packaging step is mandatory within the Tuscany region.
