Crumbed anchovies with bitter chicory
Speaking about the Mediterranean diet, we can not avoid to describe the traditional Mediterranean dishes, especially those that have the taste of the sea.
Today we chose “alici ammollicate” (crumbed anchovies), a typical and essentially poor disch from the coastal areas of southern Italy, from Apulia to Campania, from Sicily to Calabria.
The recipe we are proposing is a variation of the traditional dish coming from Gargano.
Ingredients (4 persons)
1/2 kg of fresh anchovies washed and boned
700g of cutting bitter chicory
200g of breadcrumbs
1 tablespoon of grated pecorino
Clean the bitter chicory and boil it in salty water. Take a baking dish and put in a bit of oil, make a layer of fresh anchovies boned dressed with a bit of salt and cover with a layer of bitter chicory. Repeat these layers until the end of the ingredients. Cover the preparation with a layer of bread crumbs mixed with cheese, salt, pepper and oil, add 1 or 2 spoon of water and bake at 200 degrees for about 20 minutes, until the crust will be made.
